Poached Eggs With Bacon & Avocado

Breakfast is the best meal of the day for me personally.  I always try to make it something healthy and filling.   After all it is the first meal to kick start your metabolism and your day.  Usually at the weekends I like to make a fancy breakfast, as I have a bit more time than the week days.

This weekends luxury breakfast was this...


Gorgeous aren't they??  A little piece of heaven on a plate.  This my take on the famous Eggs Benedict (kind of...).  I swapped some ingredients around and replaced with others and it turned out like this.


At the base, as opposed to the traditional English muffins I used Kalamata bread, olive bread to you and I. I gave the slices a quick cook in the toaster to add a little crunch.  I love this bread as you get big pieces of olive in there and it tastes so much better than just regular bread.

The next layer is mashed up avocado.  Half was more than enough to make two servings.  I added nothing to mine just gave it a good old mash into a chunky paste.  No lemon or pepper or salt, just plain old avocado.

On top of that is a poached egg which I poached for 5 minutes in boiling water.  On top of that I then added some bacon with all visable fat removed (we're being healthy here remember??)  I chopped it into small pieces and just scattered them on top.

Lastly the dish was seasoned with black pepper and a sprig of parsley.  Ta-dah!

An easy simple dish which will take no time at all plus they taste amazing too.  This was my first time making this and it was done in about 5 to 8 minutes.  Not bad huh?  I love it when you cut in to it the egg just oozes out everywhere. Homer Simpson drool time!!
